As mentioned in our Exploring Hanoi post, our trip to Ha Long Bay was one of our favorite excursions. We booked an overnight cruise on the Erina Cruise company. Above are some images from our lovely room with floor to ceiling windows and a private deck and some of the common areas. The weather was overcast so the lighting made it a little difficult to capture photos but the scenery was stunning.

Vietnam Scrapbook has to include photos of our favorite coconut coffee

Before our trip we read that Vietnam is the second largest producer of coffee in the world. They have a thriving coffee scene and several of their own unique twists on coffee drinks, so we decided that we wanted to make a point of trying some of the different varieties during our trip. We enjoyed the salt coffee, though it was quite sweet. The egg coffee was not a favorite. The coconut coffee though, wow. What a treat. Each cafe has their own twist on the drink, some sweeter than others, some garnished with cookies or sweetened coconut flakes. To make coconut coffee sweetened condensed milk and coconut cream are blended with ice and added to the expresso. The result is a creamy, cold, lightly sweetened coffee drink, that we loved! At the end of our time in Vietnam Tim asked several times, “what am I going to do without coconut coffee?”.
